• Vinification: Pressed with whole clusters, ambient yeast fermentation. Aged 11 months in 228L used oak barrels and another 6 months in tank. Bottled both as a classic cuvée with 40-50 mg/L added SO2 and as a "Zen" cuvée with only 10-20 mg/l added SO2.
