- Vine Age: Planted from the mid-1930s to 1970
- Terroir: Highest and stoniest part of slope, southeastern exposition, Bajocian soil with siliceous crystals.
- Viticulture: Organic (Ecocert) and biodynamic (Demeter, 2006)
- Vinification: Pressed with whole clusters, ambient yeast fermentation. Aged for 17-18 months in 228L used oak barrels and another 6 months in tanks.
Additional Info
2023, 2024: "Zen" cuvée with only 10-20 mg/L added SO2.
2020, 2021, 2022: Bottled both as a classic cuvée with 40-50 mg/L added SO2 and as a "Zen" cuvée with only 10-20 mg/l added SO2.
