    • Vinification: 100% de-stemmed, crushed, pre-fermentation maceration, 1-2-week ambient yeast fermentation, punch-downs and pump-overs, settled, aged for 15-18 months in barrels (35-50% new), no fining or filtration, bottled by hand.
