    • Terroir: A blend of Savigny-lès-Beaune Les Boutières (0.10 ha; planted 1999-2000; flat slope; humid; clay-marl) and Savigny-lès-Beaune Les Chevrières (0.60 ha; planted in 2021; south-facing; drier at the top, more humid at the bottom; clay-limestone).
    • Viticulture: Farmed by Seiichi, organic and biodynamic.
    • Vinification: Pressed for 1.5 hours, ambient yeast fermentation and aging for 12 months in used barrels, aged for an additional 7 months in tank, no fining, light filtration, SO2 added when racked to tank and before bottling (20-40 ppm total at bottling).
