• Terroir: From the oldest vines in Les Lormes in Pommard, clay-limestone soils. De Sousa is a cuvée name rather than a terroir, named after the former owner of the parcel.
• Viticulture: Farmed by Seiichi, biodynamic (not certified).
• Vinification: 100% whole cluster, ambient yeast fermentation with very few punch-downs/pump-overs, malolactic fermentation done before de-vatting. Aged in barrel for 16 months, no fining, no filtration. Minimal SO2 adjustments during élevage and bottling if needed.
