• Terroir: On a high-seated plateau, cool site, well-draining clay soil with a strong limestone influence.
• Viticulture: Purchased grapes, sustainable, 45-60 hl/ha.
• Vinification: Pressed for 1.5 hours, ambient yeast fermentation and aging for 12 months in used barrels, aged for an additional 3-7 months in tank, no fining, light filtration, SO2 added when racked to tank and before bottling (15-30 ppm total at bottling).
