    • Terroir: Mesnil-sur-Oger. Pure iodized chalk with colluvial limestone-chalk formations.
    • Viticulture: Certified organic (Ecocert, 2022), biodynamic methods since 2021.
    • Vinification: Ambient yeast primary and malolactic fermentations with no added SO2. Aged 10 months in 600-liter barrels (40%) and in stainless steel tank (60%). No fining, no filtration.
