• Terroir: From 'Malo' in Mesnil-sur-Oger, on the slope overlooking the village, east/southeast-facing. Pure iodized chalk with colluvial limestone-chalk formations. "Nicknamed Mont Blanc because of its chalk of a dazzling whiteness."
• Viticulture: Certified organic (Ecocert, 2022), biodynamic methods since 2021.
• Vinification: Ambient yeast primary and malolactic fermentations with no added SO2. Aged 10 months in 600-liter barrels and in stainless steel tank. No fining, no filtration.
