    • Terroir: From Les Mesneux, at the foot of the Montagne de Reims. Silt over chalk on the lower slope, clay over sand on the upper slope. Southeastern exposure.
    • Viticulture: Certified organic (Ecocert, 2022), biodynamic methods since 2021.
    • Vinification: Ambient yeast primary and malolactic fermentations with no added SO2. Aged 7 months in used foudre and barrels. No fining, no filtration.
