    • Vinification: Destemmed. 2-week ambient yeast fermentation. Punch-downs for the first 4-5 days of fermentation followed by pump-overs. Malolactic fermentation and aging for 10 months in used barrels. Filtered. 50-60 ppm total SO2 at bottling.
