• Terroir: From parcels at the crossroads of the communes of Savigny-les-Beaune, Pernand-Vergelesses and Aloxe-Corton. Planted at the base of the hills on deep clay soil.
• Viticulture: Organic (in official conversion)
• Vinification: Destemmed. 2-week ambient yeast fermentation. Punch-downs for the first 4-5 days of fermentation followed by pump-overs. Malolactic fermentation and aging for 10 months in used barrels. Filtered. 50-60 ppm total SO2 at bottling.
