    • Vinification: 20-25% whole cluster, 2-week ambient yeast fermentation, punch-downs for the first 4-5 days of fermentation followed by pump-overs, aged for 10-12 months in barrels (20% new), filtered, 50-60 ppm total SO2 at bottling.
