    • Vinification: 20% whole cluster, 2-week ambient yeast fermentation, punch-downs for the first 4-5 days of fermentation followed by pump-overs, aged for 10-12 months in barrels (25% new), filtered, 50-60 ppm total SO2 at bottling.

    Additional Info

    The name Gravains comes from the gravel and mixed sediments in the soil. In the vineyard, grass growth is allowed but limited with regular plowing to maintain natural soil balance. Moderate use of organic fertilizers and strict pruning to control yields. Green harvest only when necessary.

    The annual production of this cuvée is from 415 to 460 cases.
