    • Viticulture: Purchased grapes, organic (in conversion since 2025), Poussard pruning.
    • Vinification: 100% whole cluster, fermentation started with an ambient yeast pied de cuve, punch-downs, pressed with a vertical press, aged for 10 months in barrels (50% new), racked twice, minimal doses of SO2 added after malolactic fermentation.
