    • Vinification: Grapes are co-fermented, 100% whole-cluster, 10-14 day ambient yeast fermentation and semi-carbonic maceration in steel or wood tanks, minimal extraction by wetting the cap with buckets and 2-3 foot treads near the end of fermentation, vertical press, aged for 18-22 months in used barrels, no fining or filtration, no added SO2 since 2024, might add exceptionally (less than 20 ppm).

    Additional Info

    Before 2023, the wine was made with 100% Pinot Noir from an isolated garden in Sainte-Marie-Sur-Ouche, on stony, shallow soil. The name of the cuvée referred to a nearby cherry tree in the garden. In 2023, Bastian switched the parcels and is now making the wine from a vineyard that he farms in Comblanchien, which conveniently also has a cherry tree planted nearby.
