  • Vinification: No added SO2 during vinification or aging. 50-75% whole cluster, 2-week ambient yeast fermentation with punch-downs for the first 5 days followed by daily pump-overs with one final punch-down before pressing. Aged for 15 months in barrels (0-40% new). SO2 added before bottling (25-40 ppm total).
