    • Vinification: No added SO2 during vinification or aging. 50-75% whole cluster, 2-week ambient yeast fermentation with alternating daily punch-downs and pump-overs. Aged for 15 months in barrels (0-30% new). SO2 added before bottling (25-40 ppm total).
