    • Vinification: Usually destemmed, occasional wine with max. 20% whole-clusters; ambient yeast fermentation in oak tanks; no or limited foot or hand punch-downs (1 or 2 max.); pressed in small vertical press; one to two week settling in tank; aged 12 months in 228L barrels, new only when it is necessary to replace a barrel; racked into stainless tanks for a further 4 to 6 months ageing; no fining, rare filtration; bottled with DIAM closures.

    Additional Info

    The top of the Combe au Moine vineyard is one of the highest elevations for a 1er Cru in Burgundy. This altitude coupled with a north-eastern exposure, result in late-ripening grapes, and a wine with wonderful freshness.
