• Terroir: From a vineyard discovered by Raphaëlle in 2018, hidden behind a wall of wild blackberry bushes. On a limestone plateau with biodiverse surroundings.
• Viticulture: Organic (not certified).
• Vinification: 100% whole cluster, 2-week fermentation and maceration. Aged for 6 months in barrels. SO2 added only after aging (0-15 ppm total SO2 at bottling).
