Indigenous yeasts, vinified and aged about 12 months in stainless steel tank and/or barrel. Naturally-occurring partial malo. No fining, light earth filtration.
- Vinification (red): De-stemmed, ambient yeast fermentation and aging for 9 months in concrete tank, no fining, light earth filtration.
