    • Varieties: Grenache Noir, Mourvèdre, Carignan Noir
    • Vine Age: Planted between 1940 and 1960
    • Terroir: Schist and marl topsoil over a limestone bedrock, surrounded by a truffle ground, in the "Terres Noires" of Espira de l'Agly
    • Viticulture: Organic (certified), biodynamic methods. Yields are around 20 hl/ha here.
    • Vinification: 100% whole clusters (crushed), ambient yeast fermentation, infusion. Aged for 20 months in used barrels. No chaptalization, acidification, fining, or filtration. Bottled by gravity in accordance with the phase of the moon.
