• Vine Age: Planted in early 2000s
• Terroir: From the lieu-dit "Sote-Mirandes" in Espira de l'Agly. Volcanic, basaltic soils.
• Viticulture: Organic (certified), biodynamic methods. Yields are around 20 hl/ha here.
• Vinification: 100% whole clusters (crushed), ambient yeast fermentation, infusion. Aged 24-36 months in used barrels. No chaptalization, acidification, fining, or filtration. Bottled by gravity in accordance with the phase of the moon.
