• Vinification: Pneumatically pressed with whole clusters, lightly settled, ambient yeast fermentation in 300 to 350-liter barrels. Aged up to 18 months, 50-80% in stainless steel tank and 20-50% in barrels (up to 30% new). Bottled on a root day, waning moon.
