    • Vinification: 20% whole cluster, gravity transfer to concrete tank. Ambient yeast fermentation with no added SO2, one punch-down daily until mid-fermentation and one pump-over daily until the end of maceration. Aged for 12 months in barrels (20% new), followed by 5 months in tank. SO2 added after malolactic fermentation and at bottling. Bottled on a fruit day, waning moon.

    Rootstock is massal selection only and 10,000 vines are planted per hectare. Pruning is a combination of Cordon de Royat, Guyot and Guyot Poussard. Grass is left to grow on what amounts to 1/3 of the plot in Les Cornières, while the rest is plowed.

    "Cuvée S" is an homage to David's grandmother, Simone, who supported him as he created his domaine and played a crucial role in its beginning.

    Les Cornières: The name refers a type of tree called "cornouillers" that were present there historically. Southeast-facing, bottom of the slope (6% gradient) at 252m altitude, colluvial/alluvial soils.

    Les Charmes: Southeast-facing, bottom of the slope (6% gradient) at 250m altitude on colluvial/alluvial soils with relatively rocky topsoils (20%).
