- Vinification: Pressed with whole clusters, cold settled for 24 hours, vinification and aging for 24 months in 228 L used barrels, full malolactic conversion, racked and aged for an additional 6 months in stainless steel, fined, SO2 added after malolactic fermentation and before bottling.
