- Viticulture: Sustainable
- Vinification: 40-60% whole cluster, 2-3-week ambient yeast fermentation in stainless steel, 1-2 pump-overs per day, aged for 18-20 months in used barrels, full malolactic conversion, no fining or filtration, SO2 added before fermentation and before bottling.
