    • Terroir: From Villers-La-Faye. A blend of small parcels, mostly within the lieu-dit Pièce Dame Marie. Deep clay soil.
    • Viticulture: Organic (not certified). Half is high-trellised and planted at 3,500 vines/ha. The other half is low-trellised and planted at 10,000 vines/ha.
    • Vinification: 100% de-stemmed, 20-30 day ambient yeast fermentation in tank, 5-6 punch-downs total. Aged 15-18 months in barrels (approx. 20% new). SO2 added after malolactic fermentation (40-60 ppm total).
