- Varieties: Gringet, Altesse, Jacquère
- Viticulture: Biodynamic, vineyards managed with natural cover crops in between the rows, plowed underneath the vines.
- Vinification: Long and gentle pressing (4-7 hours), settled and decanted, ambient yeast fermentation, aged for 18 months, minimal SO2 additions, no fining or filtration, bottled with DIAM 10, DIAM 30, ArdeaSeal, or fleur de liège.
