• Viticulture: Organic (in official conversion), biodynamic methods. Vines shoots are trained into loops rather than trimmed.
• Vinification: 100% whole-cluster, ambient yeast fermentation. Aged 14 months in barrels (30% new). Blended and aged 2 months in tank.
