    • Terroir: Northern Pupillin, gentle west-facing slope, 15% average incline, 355-365 m elevation, Bajocian clay, marl and limestone.
    • Viticulture: Sustainable, organic practices, 7,000 vines/ha, 2 m+ high palissage, plowed by horse and sprayed by backpack due to the slope, cover crop with every second row left grassed over, vines replaced with massale selections.
    • Vinification: Crushed and pressed with whole clusters in a vertical oak press, ambient yeast fermentation and aging for 24 months on the lees in 110, 228 and 456 L barrels, racked and aged for an additional 6 months in stainless steel, no fining or filtration, SO2 added during racking and/or before bottling.
