    • Viticulture: Sustainable, organic practices, 7,700 vines/ha, plowed by horse and sprayed by backpack due to the slope, 2+ m high palissage, mostly grassed over, vines replaced with massale selections.
    • Vinification: Crushed and pressed with whole clusters in a vertical oak press, ambient yeast fermentation and aging for 24 months on the lees in 228 L barrels, racked and aged for an additional 6 months in stainless steel, no fining or filtration, SO2 added during racking and/or before bottling.
