    At a Glance

    • Variety: Chardonnay
    • Terroir: Sous le Château lieu-dit, southeast facing, 280-350m elevation, chalk and stone soil.
    • Vinification: Double-sorted on a vibrating table and a sorting table. Pressed with whole clusters, cold settled. Minimal SO2 addition to the musts. Ambient yeast fermentation and aging for 12-24 months in used barrels, rarely stirred. No fining and gentle filtration if necessary.
