• Vinification: Double-sorted on a vibrating table and a sorting table. 50% whole-cluster, minimal SO2 addition to the must. Ambient yeast fermentation in open vats with gentle punch-downs. Aged for 18 months in used barrels, blended and aged another few months in stainless steel tank before bottled. No fining and gentle filtration if necessary.
