    • Variety: Chardonnay
    • Vine Age: About 25 years old
    • Terroir: East-southeast facing, 270-320m elevation, marl and limestone soil (Middle Jurassic period).
    • Vinification: Double-sorted on a vibrating table and a sorting table. Pressed with whole clusters, cold settled. Minimal SO2 addition to the musts. Ambient yeast fermentation and aging for 12 months in 225-600L barrels (0-5% new), rarely stirred. No fining and gentle filtration if necessary.
