• Viticulture: Certified organic (AB). 5,500 vines/ha. Guyot-Poussard pruning. 45 hl/ha maximum yield.
• Vinification: Hand harvested, sorted in the vineyards. Pressed with whole clusters. Ambient yeast fermentation in vat and used barrels. Aged for 11-12 months in used barrels. No fining, lightly filtered.
