    • Terroir: From a monopole in Saumur-Champigny, in the town of Chacé. Southwest-facing, sand and silt soil.
    • Viticulture: Certified organic (AB). 5,500 vines/ha. Guyau Val de Loire pruning. 35 hl/ha maximum yield.
    • Vinification: Hand harvested, sorted in the vineyards. 100% destemmed. 2-week ambient yeast fermentation in wooden vat. Aged for 18+ months in (once and twice used) barrels. Blended and aged further in wooden vats. No fining, lightly filtered. Bottled in Magnums, aged another 2 years in bottles before release.
