    • Viticulture: Organic (not certified)
    • Vinification: 60% de-stemmed. 2-week ambient yeast fermentation with a few punch-downs. Aged for 14 months in used barrels. Bottled according to the lunar calendar. SO2 added after malolactic fermentation (approx. 50 ppm.)
