Les Horées
The name “Les Horées” derives from Greek mythology. Catharina says there are many different interpretations, but she describes “Les Horées” as marking the change in seasons. The goddesses of the seasons are called “Horae” (hours).

- Vinification (Whites): Crushed before pressing, ambient yeast fermentation with no added SO2 in barrels and stainless steel tanks, aged 9-14 months in barrels. SO2 added after malolactic fermentation or before bottling.
- Vinification (Reds): 25-100% whole cluster, ambient yeast fermentation with no added SO2 in barrels and stainless steel tanks, aged 9-14 months in barrels. SO2 added after malolactic fermentation or before bottling.
