• Variety: Pinot Noir
• Terroir: From a northeast-facing, cool, late ripening site.
• Viticulture: Purchased grapes, organic and biodynamic (not certified), plowed by horse. All of the farming done by Catharina since 2022.
• Vinification: 50% whole cluster, ambient yeast fermentation in stainless steel with no added SO2. Aged for 12 months in used barrels. Minimal SO2 added after malolactic fermentation.
