• Vinification: ⅓ de-stemmed and macerated on the skins for 5 days in 50L crates; ⅔ directly pressed as whole clusters in a basket press. Ambient yeast fermentation with no added SO2. Aged for 6 months in 350L older oak barrels. Minimal SO2 added after malolactic fermentation.
