• Variety: Pinot Noir
• Vine Age: Average of 85 years (as of 2020)
• Terroir: South-facing, leading west from the village, situated in the middle of a steep slope. Light, reddish soil, with many calcareous stones.
• Viticulture: Purchased grapes, organic and biodynamic (not certified), all of the farming done by Catharina since 2022.
• Vinification: 80% whole cluster. Ambient yeast fermentation in open-top wooden vats with gentle extraction and no added SO2. Aged in used barrels. Minimal SO2 added after malolactic fermentation.
