• Terroir: Situated in the middle of a steep south-facing slope, west of the village, light, reddish soil, with many calcareous stones.
• Viticulture: Purchased grapes, organic and biodynamic (not certified), all of the farming done by Catharina since 2022.
• Vinification: 80% whole cluster, ambient yeast fermentation in open-top wooden vats with gentle extraction and no added SO2, aged in used barrels, minimal added SO2 after malolactic fermentation.
