  • Vinification (whites): Pneumatic pressing, vinified (with no added SO2) and aged in stainless steel tank, wooden tank or 600-liter barrel, no filtration.
  • Vinification (red): Partial to 100% whole cluster, vinified (with no added SO2) in open tank, maceration lasts about one month but with very little extraction, aged in wooden tank or older barrel for about 15 months with precise racking, no fining, no filtration.
