- Vinification: Double-sorted on a vibrating table and a sorting table. 80-100% de-stemmed. Minimal SO2 addition to the must. 12-25 day ambient yeast fermentation in stainless steel tank. Aged for 16 months in barrels (20% new) and another 3 months in stainless steel tank. No fining and gentle filtration if necessary.
