• Vinification: Three different cement tanks with three different styles comprise this cuvée: De-stemmed with punch-downs; de-stemmed and pump-overs; and lastly, only whole clusters with punch-downs and pump overs. After indigenous yeast fermentation is complete, they are assembled and aged in stainless steel tanks (90%) and new oak barrels (10%).
