    • Vinification: No added SO2 during vinification, 100% destemmed, pre-fermentation cool maceration, ambient yeast fermentation with punchdowns and pump-overs, aged for 12 months in barrels (up to 20% new), no fining, light filtration if necessary, SO2 added during aging and/or before bottling.
