Vinification (whites): Grapes gently crushed before pressing, ambient yeasts fermentation in barrels and foudres, aged for 8-16 months in barrels and foudres followed by a few months in stainless steel tanks, no fining, light filtration only if necessary.
Vinification (reds): Partial to 100% whole cluster, ambient yeast fermentation in open-top wooden and concrete tanks, aged for 14-18 months in barrels (0-55% new), no fining, no filtration.
