• Terroir: Soils comprised of the oldest rock of the Triassic formation, red sandstone, with varying degrees of degradation. Steep slope (40% incline).
• Viticulture: Organic methods (not certified), homemade composts, diverse cover crops.
• Vinification: 20-45% whole cluster, 15-17 day ambient yeast fermentation in open-top wooden tanks. Aged for 16-18 months in barrels (45-50% new). No fining, no filtration.
