• Terroir: From the eastern end of the Bürgstadt Berg, steep slope (40% incline), south-facing. The subsoil is comprised of friable, degraded layers of iron-rich red rock. The topsoil is shallow and gravelly. It warms easily, is well aerated and has good drainage.
• Viticulture: Organic methods (not certified), homemade composts, diverse cover crops.
• Vinification: 45-55% whole cluster, 15-17 day ambient yeast fermentation in open-top wooden tanks. Aged for 16-18 months in barrels (45-55% new). No fining, no filtration.
