• Viticulture: Organic methods (not certified), homemade composts, diverse cover crops.
• Vinification: Gently crushed before pressing, ambient yeast fermentation in barrels, complete malolactic fermentation. Aged for 12 months in barrels (10-20% new) and 4 additional months in stainless steel tanks. No fining, light filtration when necessary.
