    • Viticulture: Organic methods (not certified), homemade composts, diverse cover crops.
    • Vinification: 40-50% whole cluster, 13-17 day ambient yeast fermentation in open-top wooden tanks. Aged for 16-18 months in barrels (15-20% new). No fining, no filtration.
